BIRTHDAY CAKE MARSHMALLOW POPCORN — Popcorn is covered in a chewy marshmallow and cake batter coating, then sprinkles are added for a fun and festive touch.
Today is my birthday! But I confess, I’m not much of a birthday cake girl. I’d take a pie or cheesecake or a Rice Krispies treat over a cake almost any day. Or this Birthday Cake Marshmallow Popcorn!
It’s got a gooey marshmallow coating (I just love gooey, melty marshmallows) with all the flavors of a birthday cake. My kind of birthday treat! Of course, you don’t need to wait for a birthday to make this delicious sweet treat!
It’s so quick and easy, and you probably have most of the ingredients in your pantry. If you’ve ever made Rice Krispies treats at home, this recipe is pretty similar.
You are going to need a very large bowl to stir everything together. I find a big roasting pan works really well too.
In fact, I prefer the roasting pan because it’s much easier to get all of the popcorn coated in the marshmallow coating. But either way will work!
If you’re like me and you have a bunch of random, half-empty bottles of sprinkles in your cupboard, this is a great way to use them up.
I usually just use a few bags of microwave popcorn to get my 6 cups, because that’s what typically have on hand.
But you can pop up regular popcorn kernels too. Just be sure, whichever kind of popcorn you use, to remove all of the unpopped kernels before proceeding with the recipe.
The only problem with this recipe is that once you start eating it, it’s hard to stop! But if it’s you’re birthday, it’s okay to indulge a little!

Here’s what you’ll need to make Birthday Cake Marshmallow Popcorn
- White cake mix
- 12 cups popped popcorn
- 6 tablespoons butter
- 6 cups miniature marshmallows
- 1 tablespoon vanilla
- 2 tablespoons milk
- 2 cups white cake mix
- Place the popped popcorn in a large bowl or roasting pan.
- In a medium saucepan, melt the butter and marshmallows over medium-low heat, stirring constantly, until smooth.
- Remove from heat and stir in vanilla, milk and cake mix. Stir until cake mix is dissolved.
- Pour the marshmallow mixture over the popcorn and stir to coat evenly. Top with sprinkles and spread onto a large, parchment lined baking sheet to cool.
