    Citrus Doodle Cookies

    I wanted to start the month of March by sharing a recipe that reminded me of Spring, and these Citrus Doodle Cookies, loaded with orange and lemon zest, seemed like the way to go. They’ll definitely bring a bit of sunshine to your day, even if it’s still cold and dreary where you live. These soft sugar cookie-style treats are topped off with a sweet and slightly tart powdered sugar glaze. It’s what makes these cookies stand out, so don’t be tempted to skip it. This is such a simple little cookie, but it’s big on flavor, and a welcome change from the usual chocolate desserts. Don’t get me wrong. I love chocolate, but sometimes you need a little something different. These were a huge hit at my house, and they’re sure to be a favorite at your house too!

    Ingredients

    • 1 tablespoon baking powder
    • 1/2 teaspoon salt
    • 1 cup (2 sticks) unsalted butter, softened
    • 1 1/2 cups granulated sugar
    • 1 tablespoons orange zest
    • 1 tablespoon lemon zest
    • 1 teaspoon vanilla
    • 2 large eggs
    • 1 tablespoon lemon zest
    • 2 tablespoons lemon juice
    • 1 tablespoon orange zest
    • 2 tablespoons orange juice

    Instructions

    1. Preheat oven to 350 degrees. Lightly grease baking sheets or line with parchment paper.
    2. In a large bowl,combine flour,baking powder,and salt.
    3. In another large bowl,beat the softened butter,sugar,1 tablespoon orange zest,and 1 tablespoon lemon zest with an electric mixer on medium-high until light and fluffy.
    4. Beat in the eggs,one at a time,until well combined. Mix in the vanilla.
    5. Gradually add the flour mixture,mixing until combined.
    6. Roll dough into 1-inch balls and place 2 inches apart on prepared baking sheets. Bake 10-12 minutes or until edges are golden.
    7. Cool cookies on pan for 2-3 minutes,then transfer cookies to racks to cool completely.
    8. In a medium bowl,combine the ingredients for the glaze and whisk until smooth. If needed,add more juice,1 teaspoon at a time,until glaze reaches desired consistency.
    9. Spoon some glaze over each cookie and use the back of the spoon to spread it evenly to the edges. Allow glaze to set for about one hour before serving.

      These cookies were perfect the first two or three days. After that, they lose their chewiness.
