In case I haven’t mentioned it, I love my air fryer, and if you’re looking for the perfect side dish to serve with practically any meal, look no further than this recipe for Crispy Air Fryer Potatoes.

I’ll be honesty, I don’t have much luck with trendy kitchen appliances, like the Instant Pot, for example. So I was skeptical about owning an air fryer and delayed buying one for quite a while.

When I finally took the plunge, I regretted not getting an air fryer sooner. Especially when it comes to cooking my family’s favorite side dish–potatoes!

I’ve tried many recipes at home for making crispy, oven-baked roasted potatoes, but none of them compare to these crispy air-fried potatoes. And that goes for making all kinds of crispy potatoes at home, including French fries and potato chips.

Of course, if you don’t have an air fryer, you can definitely use this recipe to make roasted potatoes in your oven, and they’ll still be fairly crispy and totally delicious. But if you want really crispy potatoes, an air fryer is the way to go.

Crispy Air Fryer Potatoes

My recipe calls for baby potatoes, but you can certainly use full-size potatoes and cut them into chunks. Any kind of potato works well, so feel free to use what you have on hand.

Besides potatoes, you’ll just need some olive, garlic salt and Italian seasoning for cooking. Once the potatoes are nice and crispy, you’ll drizzle them with lemon juice and sprinkle them with fresh parsley before serving.

Really, you can use an seasonings you like for this cooking method, but what really makes these potatoes shine is the lemon juice and parsley garnish, so don’t skip that step.

When I say these potatoes are a great side dish for almost any meal, I really mean it. Serve them with chicken, burgers, steak, seafood, or even your Tex-Mex favorites. Okay, it might be a bit much to serve potatoes with pasta, but honestly, I wouldn’t complain about that either!

Ingredients 

  • 1 lb. baby potatoes halved
  • 1 tablespoon olive oil
  • 1 teaspoon garlic salt
  • 1/2 teaspoon pepper
  • 1 teaspoon Italian seasoning
  • Juice of 1/2 a lemon
  • 1 tablespoon fresh chopped parsley

Instructions

  • Preheat air fryer to 400 degrees. In a large bowl, toss the potatoes with the olive oil, garlic salt, pepper and Italian seasoning.
  • Add potatoes to air fryer and cook for 17-20 minutes, shaking the basket halfway through cooking time.
  • Squeeze lemon juice over cooked potatoes. Sprinkle with parsley. Season to taste with salt and pepper. Toss to coat before serving.
