There is one secret ingredient in this recipe–a few ounces of softened cream cheese. It adds a bit of tang and a hint of creaminess to this recipe, and it’s definitely not as good without it.
I think of this dish as kind of a sweet creamed corn. Although I don’t actually liked traditional creamed corn, I absolutely love this quick and easy side dish.
I most often make this with frozen corn–one 16 ounce bag is all you need. But if you’re lucky enough to have fresh corn available, that’s even better.
I know this time of year lots of people are freezing fresh corn, and this is the perfect recipe for enjoying that harvest all year long.
Although I haven’t tried it, I’m sure you could also use well drained canned corn if that’s what you have on hand. The rest of the ingredients are probably things you have in your pantry or refrigerator right now.
And this recipe definitely is easy! From start to finish, I can have this corn on the table in about 10 minutes, which is about as long as I like to spend on a side dish.

- 2 tablespoons butter

- 16 ounces corn, fresh or frozen
