When it comes to quick weeknight meals, frozen shrimp is a staple at our house. With some frozen shrimp and a few additional ingredients, I can create a restaurant-style meal like this Easy Shrimp Scampi and Spinach Alfredo in no time!
My boys all love seafood, and Alfredo is one of their all-time favorites, so this was a huge hit at our house.
I just added some cream, along with Parmesan cheese and spinach, then tossed everything with cooked linguine and dinner was done!

The shrimp scampi cooks up in less than 10 minutes, so I like to cook the pasta while I’m sauteeing my shrimp. Believe it or not, you’ll have this entire dish on the table in about 15 minutes!
I used two boxes of SeaPak Shrimp Scampi in this recipe, but you could easily cut that in half to serve fewer people. Although we certainly didn’t have any leftovers!

Once the scampi is fully cooked, just stir in the cream and Parmesan cheese and simmer everything for a few minutes to thicken the sauce.

My kids will happily eat spinach in this dish, as long as I don’t use too much, so if you like more, go for it!

Here’s what you’ll need to make Easy Shrimp Scampi and Spinach Alfredo

- Linguine or fettuccine
- Heavy cream
- Parmesan cheese
- Baby spinach
- 2 (12 oz.) boxes SeaPak Shrimp Scampi
- 16 ounces linguine or fettuccine
- 1/2 cup heavy cream
- 1/3 cup grated Parmesan cheese
- 3-4 cups baby spinach
- Prepare shrimp scampi according to package instructions.
- While shrimp is cooking, prepare pasta according to package directions. Drain and set aside.
- When shrimp scampi is fully cooked, stir in cream and Parmesan cheese. Simmer a few minutes longer, until sauce is thickened and cheese is melted. Stir in spinach and cook until just wilted.
- In a large bowl or serving dish, toss together pasta and sauce. Serve immediately.
