PEANUT BUTTER AND JELLY PANCAKE BITES — Mini pancakes are stuffed with peanut butter and jelly in this fun breakfast treat!
We eat peanut butter almost every day at my house. It’s a staple in my boys’ school lunches, and also a big part of our after-school snacking. We love it for breakfast too! And these Peanut Butter & Jelly Pancake Bites are a new favorite.
As much as we love peanut butter, we do disagree on smooth vs. chunky. Which is why I love Peter Pan’s new Simply Ground Peanut Butter. It’s creamy with a bit of crunch, so we don’t have to choose between one or the other.
It has the perfect texture–just like freshly ground peanut butter, and there are no artificial colors, flavors, or preservatives.
Plus, it spreads beautifully, and I’m really partial to the wide mouth jar. It’s great for dipping and snacking. I can’t be the only one who eats peanut butter straight from the jar, right?
First, you’ll need to whip up a batch of your favorite pancake batter. Store-bought or homemade are both fine. I used my small cookie scoop to portion out the batter for my mini pancakes and they were the perfect size.
Once you have your pancakes made, the rest is easy. Spread one mini pancake with peanut butter, another with jelly, then put them together to make a delicious little breakfast bite.
We’ve even had these for lunch in place of regular peanut butter and jelly sandwiches. If you love peanut butter, they’re pretty irresistible.
I like to make a big batch of little pancakes, then freeze what we don’t use. Then my boys can toss a few in the microwave, add some peanut butter and jelly, and have a quick and easy breakfast or snack in no time.


Peanut Butter & Jelly Pancake Bites
Mini pancakes are stuffed with peanut butter and jelly in this fun breakfast treat!
Ingredients
- 2-3 cups of your favorite pancake batter
- 1/2 cup Peter Pan Simply Ground Peanut Butter
- 1/2 cup jelly or jam
Instructions
- Preheat griddle or non-stick skillet over medium heat. For each mini pancake, add about one tablespoon of pancake batter to skillet. When bubbles appear on the surface, flip pancakes and cook until golden. Repeat with remaining batter.
- Spread one mini pancake with peanut butter. Spread a second mini pancake with jelly. Sandwich together and enjoy!

Oh my gosh- I was so sad I didn’t get to work on this project because that peanut butter sounds amazing!!! I will definitely be picking up some on my next store run so I can make these INCREDIBLE pancakes!
