Copycat Restaurant Style Mexican Rice

This easy to make side dish tastes just like the rice from your favorite Mexican restaurant.

Ingredients

  • 2 tablespoons butter
  • 1 cup uncooked white rice
  • 3 cloves garlic minced
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon pepper
  • Pinch of cayenne pepper
  • 1/4 cup finely diced onion
  • 1/4 cup tomato sauce
  • 1 3/4 cups chicken broth
  • 1-2 tablespoons fresh chopped cilantro

Instructions

  1. Melt butter in a large saucepan over medium heat. Add rice and cook, stirring constantly, until just golden. Add garlic, cumin, chili powder, pepper and cayenne and cook a few minutes more.
  2. Stir in onions and cook until onions are tender. Stir in tomato sauce and chicken broth and bring to a boil.
  3. Reduce heat to low. Cover and simmer for 20-25 minutes, or until rice is tender. Fluff with a fork. Stir in cilantro.
