Pineapple Black Bean Salsa

Black beans, fresh pineapple, jalapeno and cilantro are tossed with lime juice in this healthy, refreshing salsa.

Ingredients

  • 1 15 oz. can black beans, rinsed and drained
  • 1.5 cups fresh diced pineapple
  • 2-3 tablespoons chopped fresh cilantro
  • 1/2 cup diced red onion
  • 1 small jalapeno seeded and diced
  • 2 green onions chopped
  • 1-2 cloves garlic minced
  • 2-3 tablespoons lime juice
  • Salt and pepper to taste

Instructions

  • Combine all ingredients in a medium bowl and toss to mix well.
  • Refrigerate until serving. Serve with tortilla chips.
