Sweet Potato Wedges with Bacon Dressing

Ingredients

  • 3-4 tablespoons canola oil divided
  • 4 sweet potatoes peeled and cut into wedges
  • 1 1/2 teaspoons paprika
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 slices bacon chopped
  • 1 clove garlic minced
  • 4 tablespoons red wine vinegar
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh chives

Instructions

  • Preheat oven to 425 degrees. Brush a large baking sheet with about half of the oil. Place the pan in the oven until hot, about 5 minutes.
  • Meanwhile, in a large bowl, toss together the sweet potatoes, paprika, salt, pepper and remaining oil. Remove the pan from the oven and carefully place the potatoes in a single layer on the hot pan.
  • Bake until tender, 18-20 minutes, turning once halfway through cooking.
  • While the potatoes roast, Cook the bacon in a large skillet over medium heat until crispy. Remove to a paper towel lined plate to drain.
  • Add the garlic to the pan and cook until fragrant, 1-2 minutes. Stir in the vinegar.
  • Place the cooked sweet potatoes on a large plate or platter and drizzle with the vinegar mixture. Sprinkle with the bacon, parsley and chives. Re-season with additional salt and pepper, if needed. Serve immediately.
