Pineapple Coconut Ice Cream

Coconut milk and fresh pineapple come together with a hint of lime in this creamy, cool dessert that is perfect for summer!

Ingredients

  • 3 cups fresh pineapple cubed
  • 1 can full-fat coconut milk
  • 2/3 cup sugar
  • 2 tablespoons lime juice
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon coconut extract

Instructions

  • Place all ingredients in a blender and process until smooth. Refrigerate mixture until very cold, at least 3 hours.
  • Remove from refrigerator and whisk mixture to blend. Pour into ice cream maker and freeze according to manufacturer's instructions.
  • Store in an airtight container in the freezer until ready to serve
