Quick and Easy Peanut Noodles
These quick and simple peanut noodles come together in less than 30 minutes and taste amazing. Serve toppings on the side and let everyone add their own!

- 1 1/4 cups chicken or vegetable broth
- 5-6 tablespoons creamy peanut butter
- 1 teaspoon Sriracha sauce
- 3 tablespoons honey
- 6 tablespoons soy sauce
- 2 tablespoons minced fresh ginger
- 4-6 garlic cloves minced
- 16 ounces linguine noodles
- 4-5 green onions chopped
- 1/2 cup chopped fresh cilantro
- 2-3 limes cut into wedges
- 1/2 cup chopped salted peanuts
Bring a large pot of salted water to a boil. Meanwhile, in a medium saucepan, whisk together the broth, peanut butter, Sriracha sauce, honey, soy sauce, ginger and garlic. Bring to a simmer over medium heat, stirring until the peanut butter is melted and the sauce is smooth.
Add the linguine to the boiling water and cook according to package directions. Drain and add noodles to a large bowl. Add the peanut sauce and toss to coat well.
Serve topped with green onions, cilantro, lime wedges and chopped peanuts, if desired.
