Traditional Afghan Salad

Loaded with fresh vegetables like tomatoes, cucumbers and lettuce, and tossed with a bit of lime juice, this light, refreshing side-dish is the perfect accompaniment to almost any meal.

Ingredients

  • 1 head Romaine lettuce finely chopped
  • 3-4 Roma tomatoes finely diced
  • 1 large cucumber finely diced
  • 1/2 cup finely chopped red onion
  • 1/4 cup fresh chopped cilantro
  • 1/4 cup fresh chopped mint
  • 4 green onions sliced
  • Juice of two limes
  • Salt to taste

Instructions

  • In a large bowl, combine all of vegetables and fresh herbs.
  • Squeeze lime juice over salad and toss to coat well. Season with salt, to taste.
