Fresh Cucumber Tomato Salad

Crunchy cucumbers, juicy tomatoes, red onions and fresh dill are tossed in a sweet and tangy vinaigrette in this classic summer salad.

Ingredients

  • 2 English cucumbers cut into 1/2 inch chunks
  • 4-5 Roma tomatoes cut into 1/2 inch chunks
  • 1/2 cup thinly sliced red onion
  • 1/4 cup water
  • 1/4 cup apple cider vinegar
  • 1 tablespoon sugar
  • 2-3 tablespoons chopped fresh dill
  • Salt and pepper to taste

Instructions

  • In a large bowl, toss together cucumbers, tomatoes and red onions.
  • In a small bowl, whisk together water, vinegar, and sugar. Pour over cucumbers and tomatoes.
  • Add dill and toss to coat well. Season with salt and pepper, to taste. If possible, refrigerate for at least on hour before serving.
