Ingredients

  • 2-3 medium yellow squash sliced 1/4-1/2 inch thick
  • 2 eggs
  • 1 tablespoon milk
  • 1/4 cup cornmeal
  • 1/2 cup seasoned bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon onion powder
  • 1/2 paprika
  • 1/4 teaspoon garlic powder

Instructions

  • Season the sliced squash with salt and pepper, to taste. In a shallow pan, whisk together the eggs and milk.
  • In a second shallow pan, combine the cornmeal, bread crumbs, Parmesan, salt, pepper, onion powder, paprika and garlic powder.
  • Dredge the sliced squash in the egg mixture, then coat with the breadcrumb mixture. Arrange in a single layer on your air fryer's cooking rack. You may need to cook the squash in 2-3 batches.
  • Air fry the squash at 400 degrees for 10-15 minutes, or until just tender on the inside and golden on the outside.
