Sarah's Strawberry Pecan Goat Cheese Salad

This hearty salad feature fresh berries, dried cranberries, toasted almonds, candied pecans and crumbled goat cheese, all tossed in a sweet and tangy raspberry vinaigrette.

Ingredients

  • 10 ounces prepared baby spinach or Spring mix
  • 1 1/2 cups sliced strawberries
  • 1 cup blueberries
  • 1 cup diced green apple optional
  • 1/2 cup sliced almonds toasted
  • 3/4 cup candied pecans chopped
  • 1/2 cup dried cranberries
  • 1/2 cup crumbled goat cheese
  • Raspberry vinaigrette to taste

Instructions

  • In a large bowl, toss together all the ingredients except the vinaigrette.
  • Add desired amount of raspberry vinaigrette and serve immediately. Alternately, you can serve the raspberry vinaigrette on the side.
