Farmhouse Country Salad

This simple salad is anything but simple tasting, featuring Romaine lettuce tossed with crispy bacon, tangy blue cheese and a Dijon vinaigrette, it may just become your go-to salad.

Ingredients

For the dressing

  • 1 tablespoons lemon juice
  • 2 tablespoons red wine vinegar
  • 1 clove garlic minced
  • 1 tablespoon Dijon mustard
  • 1/2 cup olive oil
  • Salt and pepper to taste

For the salad

  • 2 heads Romaine lettuce chopped
  • 6-8 slices bacon cooked crisp and crumbled
  • 1/3 cup crumbled blue cheese
  • 2-3 green onions sliced
  • 1/2 cup fresh toasted breadcrumbs

Instructions

  • In a small bowl, whisk together the dressing ingredients until well combined and thickened. Alternately, place all the ingredients in a glass jar with a lid and shake well.
  • Add the salad ingredients to a large bowl. Add desired amount of dressing and toss to mix well. Serve immediately.
