Berry Watermelon Feta Salad

Watermelon, strawberries and blueberries are tossed with mint and feta cheese in a honey-lime poppy seed dressing to create this light, refreshing summer salad.

Ingredients

  • 3 tablespoons honey
  • 1 tablespoon lime juice
  • 1 teaspoon poppy seeds
  • 6 cups cubed watermelon
  • 2 cups sliced strawberries
  • 1 cup blueberries
  • 1/2 cup crumbled feta cheese
  • 1/3 cup mint leaves torn
  • Pinch of salt

Instructions

  • In a large bowl, whisk together honey, lime juice and poppy seeds.
  • Add the watermelon, strawberries and blueberries and toss to coat.
  • Gently stir in the feta cheese, then sprinkle with fresh mint. Season with a pinch of salt, if desired.
  • Refrigerate until serving. Eat within 4 hours for best texture and flavor.
