Balsamic Roasted Mini Peppers

Sweet, colorful mini peppers are roasted with garlic, olive oil, balsamic vinegar and a dash of salt in pepper in these incredibly easy, healthy side dish that goes with almost any meal.

Ingredients

  • 1 lb. sweet mini peppers
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 cloves garlic minced
  • Salt and pepper to taste
  • Fresh chopped herbs for garnish (optional)

Instructions

  • Preheat oven to 450 degrees. Line a large baking sheet with parchment paper.
  • Arrange the peppers in an even layer on the baking sheet. Drizzle with olive oil and balsamic vinegar.
  • Sprinkle with minced garlic, then salt and pepper. Toss on the baking sheet with your hands or a large spatula.
  • Cook for about 20 minutes, or until peppers are blistered and just beginning to char. Garnish with fresh chopped herbs before serving, if desired.
