Cucumber Dill Crostini

This incredibly easy appetizer is a bright, fresh addition to any party or gathering. Especially perfect for spring celebrations, this crostini is always the first thing to disappear.

Ingredients

  • 1 large crusty baguette cut into 1/4 to 1/2 inch slices
  • 2-3 tablespoons olive oil
  • Salt and pepper to taste
  • 1 8 oz. package cream cheese, softened
  • 1 .7 oz. package Zesty Italian Salad Dressing Mix
  • 1-2 large cucumbers thinly sliced
  • Fresh or dried dill for garnish

Instructions

  • Preheat oven to 400 degrees. Line a sheet pan with parchment paper.
  • Lay the baguette slices on the pan in a single layer and brush both sides with olive oil. Sprinkle with salt and pepper, if desired.
  • Bake for 7-10 minutes, or until bread is golden and slightly crispy; cool completely.
  • Meanwhile, combine the cream cheese and Italian Dressing mix in a medium bowl. Spread cream cheese mixture over cooled baguette slices.
  • Layer 2-3 cucumber slices over the cream cheese. Sprinkle with fresh or dried dill before serving.
