Whole Wheat Waffles with Homemade Vanilla Syrup

Crispy on the outside and fluffy on the inside, these whole wheat waffles are extra special when served with homemade vanilla syrup.

Ingredients

For the waffles:

  • 2 eggs
  • 2 cups whole wheat flour
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil
  • 3 tablespoons white sugar
  • 4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla

For the vanilla syrup:

  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1/4 cup butter
  • 1/4 teaspoon salt
  • 1 tablespoon vanilla
  • 1 1/2 cups water
  • 1/4 cup heavy cream

Instructions

  • To make the waffles: Preheat waffle iron. Spray with non-stick cooking spray. Beat eggs in large bowl with hand beater until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt cinnamon and vanilla until smooth.
  • Pour about 1/3 cup of batter (amount will depend on the size of your waffle iron)onto hot waffle iron. Cook until golden brown.
  • To make syrup: In a medium sauce pan whisk together water, sugar and cornstarch. Bring to a boil. Boil, stirring constantly for 3-5 minutes.
  • Reduce heat. Stir in butter, salt and vanilla until butter is completely melted. Add heavy cream and simmer a few minutes longer.
