Rice Cooker Chicken and Sausage Jambalaya

Ingredients

  • 3 tablespoons butter
  • 1 small onion diced
  • 1 red bell pepper diced
  • 2-3 cloves garlic minced
  • 13.5 ounces andouille sausage sliced
  • 1 1/2 cups white rice
  • 3 cups chicken broth
  • 2 cups cooked shredded chicken
  • 1 teaspoon Creole or Cajun seasoning
  • 1/4 teaspoon pepper
  • 3 green onions sliced
  • 1/4 cup chopped fresh parsley

Instructions

  • In a large skillet, heat butter over medium-high heat. Add onion and pepper and saute until tender, 3-5 minutes. Add garlic and sausage and cook until everything is well browned.
  • Add the rice and broth to the rice cooker. Add the sauteed vegetables and sausage, along with the chicken. Stir in the seasoning and pepper and mix well.
  • Set rice cooker to cook. When rice is done, stir in the green onions and parsley and serve immediately.
