- 3 tablespoons butter
- 1 small onion diced
- 1 red bell pepper diced
- 2-3 cloves garlic minced
- 13.5 ounces andouille sausage sliced
- 1 1/2 cups white rice
- 3 cups chicken broth
- 2 cups cooked shredded chicken
- 1 teaspoon Creole or Cajun seasoning
- 1/4 teaspoon pepper
- 3 green onions sliced
- 1/4 cup chopped fresh parsley
In a large skillet, heat butter over medium-high heat. Add onion and pepper and saute until tender, 3-5 minutes. Add garlic and sausage and cook until everything is well browned.
Add the rice and broth to the rice cooker. Add the sauteed vegetables and sausage, along with the chicken. Stir in the seasoning and pepper and mix well.
Set rice cooker to cook. When rice is done, stir in the green onions and parsley and serve immediately.
