Tex-Mex Tater Tot Casserole

A Southwest seasoned ground beef filling with black beans and corn is topped with cheese and crunchy tater tots in this remake of a classic hot dish.

Ingredients

  • 1 pound ground beef
  • 1/2 cup onion chopped
  • 2-3 cloves garlic minced
  • 1 small jalapeno seeded and diced
  • 2 red or yellow bell peppers chopped
  • 2 tablespoons flour
  • 1 package taco seasoning mix
  • 3/4 cup milk
  • 8 ounces shredded pepper jack cheese
  • 1 14 oz. can black beans, rinsed and drained
  • 1 cup frozen corn
  • Salt and pepper to taste
  • 1-2 bags frozen tater tots

Instructions

  • Preheat oven to 400 degrees.
  • In a large skillet brown ground beef, onion and garlic and cook until beef is no longer pink. Add the peppers and saute until just tender.
  • Add the flour and taco seasoning and cook a few minutes more. Gradually stir in the milk and bring to a simmer. Simmer 2-3 minutes until mixture is thickened.
  • Add half the cheese, along with the black beans and corn. Season with salt and pepper, to taste.
  • Sprinkle the remaining cheese over the ground beef mixture. Top with frozen tater tots.
  • Place skillet on a sheet pan and bake for 20-30 minutes, or until tater tots are golden brown and crispy. Let stand 5 minutes before serving.
