Rainbow Pineapple Salsa

Loads of colorful vegetables combine with sweet, fresh pineapple and lime juice in this refreshing, colorful salsa.

Ingredients

  • 2 cups fresh pineapple diced
  • 1 14.5 oz. can black beans, rinsed and drained
  • 1 cup frozen corn thawed
  • 2 Roma tomatoes diced
  • 1 red bell pepper diced
  • 1 orange bell pepper diced
  • 1 jalapeno pepper seeded and finely diced
  • 1/3 cup red onion diced
  • 1/3 cup cilantro chopped
  • 2-3 tablespoons lime juice
  • Salt and pepper to taste

Instructions

  • In a large bowl, combine all ingredients and toss to coat with lime juice.
  • Cover and refrigerate for at least one hour before serving. Serve with tortilla chips.
