Ingredients
1/2cupplain Greek yogurt
1tablespooncider vinegar
2teaspoonsred curry powder
1/2teaspoonpaprika
1/4teaspooncayenne pepper
1/4teaspoonturmeric
1/2teaspoonsalt
1/4teaspoonpepper
1clovegarlicminced
2poundsboneless skinless chicken breastscut into 1-inch pieces
Cooked ricemango chutney and fresh mint, for serving
Instructions
In a medium bowl, whisk together yogurt, vinegar, curry powder, paprika, cayenne, turmeric, salt, pepper and garlic. Add cubed chicken and toss to coat.
Cover and refrigerate for at least 2 hours, or overnight, stirring occasionally. Preheat grill to medium-high heat.
Thread chicken onto skewers, leaving a little space between each piece of chicken. Grill skewers for 8-10 minutes, turning once or twice, or until chicken is cooked through and no longer pink.
Serve over cooked rice with mango chutney and fresh chopped mint.
