Grilled Tandoori Style Chicken

Chicken is marinated in Greek yogurt and tandoori spices, then skewered and grilled to perfection in this simple, east to make meal.

Ingredients

  • 1/2 cup plain Greek yogurt
  • 1 tablespoon cider vinegar
  • 2 teaspoons red curry powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon turmeric
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 clove garlic minced
  • 2 pounds boneless skinless chicken breasts cut into 1-inch pieces
  • Cooked rice mango chutney and fresh mint, for serving

Instructions

  • In a medium bowl, whisk together yogurt, vinegar, curry powder, paprika, cayenne, turmeric, salt, pepper and garlic. Add cubed chicken and toss to coat.
  • Cover and refrigerate for at least 2 hours, or overnight, stirring occasionally. Preheat grill to medium-high heat.
  • Thread chicken onto skewers, leaving a little space between each piece of chicken. Grill skewers for 8-10 minutes, turning once or twice, or until chicken is cooked through and no longer pink.
  • Serve over cooked rice with mango chutney and fresh chopped mint.
