Homemade Thai Peanut Sauce

Ingredients

  • 3/4 cup creamy peanut butter
  • 1/2 cup coconut milk
  • 3 tablespoons soy sauce
  • 3 tablespoons lime juice
  • 1 tablespoon brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon red curry paste
  • 2 cloves garlic minced
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes
  • Salt to taste
  • 1/4-1/3 cup water

Instructions

  • Place all ingredients except water and salt in a blender and puree until smooth.
  • Gradually add water until sauce reaches desired consistency. Season with salt, to taste.
  • Refrigerate until ready to use.
