Red Velvet Berry Parfaits

This easy, patriotic dessert is made with red velvet cake mix, whipped cream, and fresh berries. Perfect for Memorial Day, Independence Day, or any summer celebration.

Ingredients

For the cake

  • 1 box red velvet cake mix plus ingredients listed on box
  • 1 cup sour cream

For the filling

  • 3 cups fresh berries blueberries, strawberries, raspberries, etc.
  • 2 cups heavy whipping cream
  • 1/4 cup sugar
  • 1/2 teaspoon vanilla

Instructions

  • Preheat oven to 350 degrees. With an electric mixer, mix cake mix, ingredients called for on box, and sour cream until smooth. Spread batter into a 9x13 inch pan and bake for about 20 minutes, or as directed on box. Set aside and cool.
  • In a medium bowl, toss together berries. With an electric mixer, beat cream, sugar and vanilla until soft peaks form.
  • Cut cooled cake into 1-inch cubes. Place a layer of cake in the bottom of your glasses or dessert dishes, top with a layer of berries, then a layer of whipped cream. Repeat at least once, or until glasses are full. Refrigerate until ready to serve.
