Favorite Coconut Rice

White rice is cooked in a coconut milk mixture with a hint of sugar and chopped green onions in this popular side dish that's perfect with almost any meal.

Ingredients

  • 2 cups Basmati or Jasmine rice
  • 1 14 oz. can coconut milk
  • 2 cups water
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 tablespoon white wine vinegar
  • 1 tablespoon sugar
  • 2-3 green onions chopped (plus more for garnish)
  • Pepper to taste

Instructions

  • Lightly grease the bowl of a large rice cooker. Add rice, coconut milk, water, salt, olive oil, vinegar and sugar and mix well. Cook according to rice cooker instructions.
  • Alternately, mix ingredients in a large saucepan on the stove. Bring to a boil, then cover and reduce heat to low. Cook for 20 minutes or until liquid is absorbed.
  • Allow rice to stand, uncovered, for about 5 minutes before serving. Fluff with a fork and season with black pepper, to taste. Garnish with additional chopped green onion, if desired
