Quick No-Bake Peppermint Thins

You only need three ingredients to make this quick and easy no-bake holiday treat! These crispy peppermint cookies are always a hit at Christmas time.

Ingredients

  • 2 packages Andes mints
  • 30 Ritz crackers
  • 1/2 cup crushed peppermint candy

Instructions

  • Line a large baking sheet with parchment paper. In a microwave safe bowl, melt the Andes mints at 50% power in one minute increments until smooth.
  • Dip crackers in the melted chocolate, allowing the excess to drip off. Place dipped crackers on prepared baking sheet. Drizzle any remaining chocolate over the dipped crackers.
  • Sprinkle the crushed peppermint evenly over the crackers. Chill for 5 minutes, or until set. Store in an airtight container at room temperature.
