Ruth's Amazing Gluten-Free Granola

Ingredients

  • 4 cups rolled oats not quick oats
  • 4 cups crisp rice cereal such as Rice Krispies
  • 1/2 cup almond flour
  • 1/2 teaspoons salt
  • 1 cup slivered almonds
  • 1/4 cup packed brown sugar
  • 1/2 cup water
  • 1/2 cup vegetable or canola oil
  • 3/4 cup honey
  • 1 teaspoon cinnamon
  • 2 teaspoons vanilla

Instructions

  • Preheat oven to 350 degrees. Lightly grease a large rimmed baking sheet.
  • In a large bowl, combine the oats, rice cereal, almond flour, salt and almonds; set aside.
  • In a medium saucepan, stir together the brown sugar, water, oil, honey, cinnamon and vanilla. Heat until mixture just begins to bubble at the edges. Do not boil. Pour the mixture over the oat mixture in the bowl and stir to coat well.
  • Spread the granola evenly on the prepared pan and bake for 20-30 minutes, or until dark golden brown. Remove from oven to a cooling rack and stir the granola with a wooden spoon. Let sit to cool completely.
  • Store in Mason jars or airtight containers in a cool, dry place for up to one week.
