My sweet friend and neighbor Ruth has been eating gluten-free for many, many years, so she’s had plenty of time to perfect her recipes. Every gluten-free baked good she’s ever shared with me has been delicious, but her granola really is amazing!
I was introduced to Ruth’s granola several months ago when we co-hosted a baby shower for a friend. We served make-your-own parfaits with yogurt, fruit and granola, which, if you’re planning a baby shower, turned out to be a very popular menu.
Ruth made her granola for our gluten-free guests, and I’m not sure anybody even touched the gluten-filled granola we purchased. I personally went back for seconds, and possibly thirds, of the gluten-free stuff.
Honestly, by the end of the party, I wasn’t even bothering with the other parfait ingredients. I was just eating Ruth’s granola with a spoon.
I find so many homemade granola recipes overly complicated and time-consuming, requiring constant stirring and a long baking time. But not this granola!
It’s a simple recipe that uses simple pantry ingredients, and takes about 30 minutes to make. My favorite part–no stirring required during baking. You only have to stir it once, after you pull it out of the oven.
You can use regular flour in this recipe instead of almond flour if you aren’t worried about it being gluten-free, but honestly, I wouldn’t recommend it. In this case the gluten-free version is actually better.
Almond flour has a nutty flavor and slightly coarse texture that is perfect for granola. And the crispy rice cereal? I don’t know why I’ve never thought of adding it to granola before. Brilliant!

- Rolled oats
- Crisp rice cereal
- Flour
- Slivered almonds
- Spices: cinnamon, salt
- Brown sugar
- Vegetable or canola oil
- Honey
- Vanilla
Ruth’s Amazing Gluten-Free Granola
Ingredients
- 4 cups rolled oats not quick oats
- 4 cups crisp rice cereal such as Rice Krispies
- 1/2 cup almond flour
- 1/2 teaspoons salt
- 1 cup slivered almonds
- 1/4 cup packed brown sugar
- 1/2 cup water
- 1/2 cup vegetable or canola oil
- 3/4 cup honey
- 1 teaspoon cinnamon
- 2 teaspoons vanilla
Instructions
- Preheat oven to 350 degrees. Lightly grease a large rimmed baking sheet.
- In a large bowl, combine the oats, rice cereal, almond flour, salt and almonds; set aside.
- In a medium saucepan, stir together the brown sugar, water, oil, honey, cinnamon and vanilla. Heat until mixture just begins to bubble at the edges. Do not boil. Pour the mixture over the oat mixture in the bowl and stir to coat well.
- Spread the granola evenly on the prepared pan and bake for 20-30 minutes, or until dark golden brown. Remove from oven to a cooling rack and stir the granola with a wooden spoon. Let sit to cool completely.
- Store in Mason jars or airtight containers in a cool, dry place for up to one week.
