Berry Cheesecake Salad will make you the most popular person at the party.
Of course, there is always a debate about whether this dish is a salad or a dessert. I say it’s both!
Whatever you choose to call it, one thing is certain. The combination of fluffy cream cheese filling and fresh berries is perfect for summer.
You can use any combination of berries you like in this recipe, but I always include strawberries and blueberries.
Especially if I’m making this salad for Independence Day, or some other patriotic occasion.
Tips for making this recipe
- Adding a few teaspoons of corn syrup to your cream as you whip it will help it stay firmer for longer.
- Make sure you dry your berries very well, or their liquid will seep into the cream cheese mixture. I like to lay mine out on a clean kitchen towel, then gently dry the top of the berries with paper towels.
Fluffy, fruity salads are a favorite of my husband, so I always try to include one at every holiday meal, and this version is perfect for when fresh berries are in season.
It’s important not to wash and dry your berries until just before you use them. Otherwise they’ll become mushy and sad.
And make sure your berries are well dried before adding them to the cream cheese mixture.
This recipe also works well with other kinds of fruit. Pineapple and mandarin oranges are some of our favorite variations.
No matter what you’re celebrating this summer, this Fluffy Berry Cheesecake Salad with be the first thing on the table to disappear.
FAQS
Can I use frozen whipped topping (Cool Whip) in this salad?
Yes. You’ll need one 8 oz. container of thawed Cool Whip if you don’t want to make whipped cream from scratch.
Can I make this salad ahead of time?
I don’t recommend it. The juices from the berries will make the salad runny after a few hours. You can make the cream cheese portion ahead of time and add the berries just before serving.
Are heavy cream and whipping cream the same thing?
Not exactly. Heavy cream contains more fat, which results in a thicker, richer whipped cream. You can use whipping cream in place of heavy cream, but the result will be a lighter, less sturdy whipped cream.
