When it comes to salads, I like mine packed with all kinds of flavors, texture and ingredients, which is why Sarah’s Strawberry Pecan Goat Cheese Salad is my all time favorite salad!

A few months ago, my friend Sarah posted a picture on Facebook of her latest salad obsession, and everything that went into it. I went and purchased all of the ingredients almost immediately.

Which is really saying something…..because while I love eating a beautiful salad like this one, I hate making salads. There’s just SO much chopping, and I don’t always feel like I’m getting a good return on my investment.

But the great thing about Sarah’s salad is that you can purchase almost every ingredient already prepped and ready to toss into a bowl. If I want to, I can get away with only slicing strawberries when I make this salad.

And of course, this salad is also amazingly delicious, refreshing and healthy. It pretty much has everything I could ever hope for in a salad.

Obviously, if you prefer a more made-from-scratch approach, you can wash and prepare your own salad greens, make your own candied pecans, and whip up your own raspberry vinaigrette.

Okay, the raspberry vinaigrette part is actually pretty easy, and only takes about five minutes to do. But if you’re otherwise in a hurry, or just lazy like me, you can go with prepared salad greens, candied nuts and salad dressing.

Sarah also sometimes adds chopped green apple to her salad. And I say, go for it! But by now you know how I feel about too much chopping.

I don’t usually crave salad. I tend to crave things like French fries and cheesecake. But I actually crave this salad. It’s that good!

Ingredients 

  • 10 ounces prepared baby spinach or Spring mix
  • 1 1/2 cups sliced strawberries
  • 1 cup blueberries
  • 1 cup diced green apple optional
  • 1/2 cup sliced almonds toasted
  • 3/4 cup candied pecans chopped
  • 1/2 cup dried cranberries
  • 1/2 cup crumbled goat cheese
  • Raspberry vinaigrette to taste

Instructions

  • In a large bowl, toss together all the ingredients except the vinaigrette.
  • Add desired amount of raspberry vinaigrette and serve immediately. Alternately, you can serve the raspberry vinaigrette on the side.

    Believe it or not, this salad is amazing with grilled chicken. I used to frequent a restaurant that offered it, although the goat cheese was in a ball with panko crumbs and fried, and it is my death-row meal.
