Frozen Blackberry Cream Pie

Blackberry preserves, sweetened cream cheese and whip cream come together in this smooth and creamy frozen pie.

Ingredients

  • 1 9- inch graham cracker pie crust prepared or homemade
  • 1 1/2 cups whipping cream
  • 1/4 cup sugar
  • 1 8 ounce block cream cheese, softened
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1 cup seedless blackberry preserves
  • Fresh blackberries for garnish

Instructions

  • Beat whipping cream and sugar with an electric mixer at high speed until stiff peaks form; set aside.
  • In a medium bowl, beat cream cheese with an electric mixer until smooth.
  • Beat in lemon juice and salt. Add blackberry preserves and stir to mix well.
  • Fold in whipped cream and spoon the mixture into the prepared crust. Cover and freeze for 4 hours, or until firm.
