Ingredients

  • 4 6 oz. lobster tails
  • 1/2 cup butter
  • 3-4 cloves garlic minced
  • Zest and juice of one lemon
  • 1 tablespoon fresh minced parsley
  • Salt and pepper to taste

Instructions

  • Preheat broiler for high heat and adjust the rack so that it is 6-8 inches below the broiler.
  • In a microwave safe bowl, melt the butter. Stir in the garlic, lemon juice and zest, and parsley. Season with salt and pepper, to taste. Set aside half of the butter mixture for dipping.
  • Place the lobster tails on a baking sheet. Using kitchen sheers, cut the shell down to the fin, then use your fingers to gently pry the lobster away from the shell, keeping it attached at the base of the tail. A spoon can help with loosening the meat from the shell.
  • Gently lift the meat up and out of the shell, so it is resting on top of the shell. Season lobster with salt and pepper, then brush with half of the garlic butter.
  • Broil for about 10 minutes, or until the internal temperature of the lobster is 145 degrees. Serve with remaining garlic butter, for dipping.
