Slow Cooker Coke Brisket Tacos

Beef brisket is seared and then slow cooked in a mixture of Coke, citrus juice and herbs and spices, then shredded and serve in warm tortillas with fresh pico de gallo. A family favorite!

Ingredients

  • 1 tablespoon oil
  • 2 pounds beef brisket cut in half
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 2 teaspoons oregano
  • 2 teaspoons cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cinnamon
  • 3-4 garlic cloves minced
  • 2 tablespoons lime juice
  • 2 tablespoons orange juice
  • 1 cup Mexican Coke

For serving

Instructions

  • Heat the oil in a large skillet over medium-high heat.
  • In a small bowl, combine the salt, pepper, oregano, cumin, chili powder, onion powder and cinnamon. Rub the mixture over the brisket. Add the brisket to the hot oil and sear on both sides until dark golden brown.
  • Transfer the brisket to the slow cooker, along with any pan juices. Add the garlic, lime and orange juice, the Coke and the bay leaf.
  • Cover and cook on high for 5-6 hours, or on high for 8-10 hours. Shred the meat using 2 forks. Serve in warm tortillas with pico de gallo and lime wedges.
