For some reason, I can never resist those bags of colorful mini peppers at the grocery store. I usually have no idea what I’ll do with them, but I always grab a bag. And that’s how this recipe came to be.
After several days, I realize I need to use those little peppers before I have to throw them out, and what could be easier than tossing them with some garlic, olive oil and balsamic vinegar and roasting them to perfection.
This “accidental” side dish has now become a family favorite, and my go-to for preparing something quick and healthy that goes with almost any main dish I’m serving.
Even my picky kids love these peppers. I’m telling you, this simple recipe is a real winner!
I like to finish the peppers off with a sprinkling of fresh herbs before serving, if I have them handy. If not, no worries. They are delicious as is.
The sweetness of the peppers and the tang of the balsamic vinegar are a wonderful flavor combinations. Feel free to experiment with adding different herbs and spices to the mix.

Balsamic Roasted Mini Peppers
Ingredients
- 1 lb. sweet mini peppers
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 cloves garlic minced
- Salt and pepper to taste
- Fresh chopped herbs for garnish (optional)
Instructions
- Preheat oven to 450 degrees. Line a large baking sheet with parchment paper.
- Arrange the peppers in an even layer on the baking sheet. Drizzle with olive oil and balsamic vinegar.
- Sprinkle with minced garlic, then salt and pepper. Toss on the baking sheet with your hands or a large spatula.
- Cook for about 20 minutes, or until peppers are blistered and just beginning to char. Garnish with fresh chopped herbs before serving, if desired.
