Chocolate Chip Toffee Cookie Bark

If you asked, I’d say I’m definitely a soft chocolate chip cookie person…..until I tried this Chocolate Chip Toffee Cookie Bark that is! This delightfully crispy cookie bark has totally won me over.

Everyone who tries this stuff loves it, although my middle son, who is a die-hard crispy cookie person, probably ate more of this than anyone. I might make a double batch next time so he can have a whole pan to himself!

But honestly, I could have eaten an entire pan myself. These crunchy, chocolate and toffee filled cookie pieces are totally addictive and irresistible. 

And you can totally change up the fillings to suit your tastes and what you have on hand. Leave out the toffee. Or leave out the nuts. Use a combination of different chocolate chips.

My favorite addition is cocoa nibs. With their crunch and nutty flavor, they’re a great substitution for the pecans, if  you want to make a nut-free version of this recipe.

Other fun additions are shredded coconut, chopped candy bars, chopped pretzels….the possibilities are pretty endless.

Since this recipe is so quick and easy to make, and the result is better than a lot of chocolate chip cookie recipes, the return on investment here is super high. Definitely my kind of recipe!

You could probably throw together a batch of this nutty chocolate chip treat with things you have in your pantry and refrigerator right now.

Plus, the end result is supposed to look like broken cookies, so you don’t even have to worry about making this cookie bark look pretty. Although it looks pretty fancy in a cellophane bag tied with a pretty ribbon, and makes a great neighbor gift.

Chocolate Chip Toffee Cookie Bark

This crispy, crunchy cookie bark features chocolate chips, toffee bits and chopped pecans. It's easy to make, fun to eat, and makes a great neighbor gift for the holidays.

Ingredients 

  • 1 cup butter melted and cooled
  • 2 teaspoons vanilla
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 2 cups flour
  • 3/4 cups chopped pecans toasted
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup toffee bits

Instructions

  • Preheat oven to 350 degrees.
  • In a large bowl, whisk together the melted butter, sugar and salt until the mixture thickens. With a wooden spoon, stir in the flour. Fold in the nuts, chocolate chips and toffee bits.
  • Press the mixture into a a large, ungreased baking sheet in a thin, even layer (about the thickness of the chocolate chips).
  • Bake for 20-25 minutes, or until the center is light golden brown. Rotate the pan once or twice during baking. Let cool completely before breaking into pieces.
