Why You’ll Love This Recipe

It seems like chocolate covered strawberries get all the attention. But if I had to choose, I’d say raspberries and chocolate are my favorite dessert combination. So why not Chocolate Covered Raspberries?

Don’t get me wrong. I love chocolate covered strawberries. They’re beautiful and delicious. And they always impress, no matter when or where you serve them.

But oh my goodness! I honestly can’t believe I haven’t thought to do this sooner. These chocolate covered raspberries were amazing!

Based on how quickly they disappeared, I’ll be sure to double the recipe next time.

Now I’m dreaming about all the other fruit I could cover in chocolate. I think I’ll try blackberries next!

Chocolate Covered Raspberries

You’ll want to use the largest, most firm berries you can find, just because they’ll be easier to dip. But these little chocolate raspberry morsels couldn’t have been any easier to make. I like to leave a bit of the raspberry peaking through.

But feel free to dunk the entire raspberry in chocolate if you’d like. It’s actually a little easier to cover the entire berry, and more chocolate is never a bad thing.

These raspberries are also pretty easy to pop into your mouth. Repeatedly. I’m speaking from experience here.

But hey, if you’re going to eat a lot of dessert, it may as well be one that’s mostly fruit, right? All I can say is “Move over chocolate covered strawberries. You’ve got competition!”

Ingredients 

  • 12 ounces raspberries
  • 6 ounces dark chocolate

Instructions

  • Wash raspberries and pat dry thoroughly with paper towels.
  • In a microwave safe bowl, heat chocolate at 50% power for 1 minute. Stir. Repeat at 30 seconds intervals until chocolate is completely melted.
  • Carefully dip the bottom 2/3 of each raspberry into the chocolate, leaving the top of the raspberry exposed. Or cover the entire berry, if you prefer.
  • Set dipped raspberries on a parchment or wax paper lined baking sheet. Refrigerate until serving.
