If you’ve tried the Costco Quinoa Salad, then you know how delicious it is. And since I only go to Costco about once a month, I new I had to recreate this healthy, protein-packed salad at home.
I always pick this salad up when I’m at Costco, and then I eat it all week for lunch. Now when I crave this salad in between Costco trips, I can whip up a batch at home.
Thanks to the quinoa and lentils, this salad is loaded with protein. It’s also loaded with tons of healthy veggies, like kale, cucumber, red pepper and tomato.
I always keep a few cans of lentils handy so I can whip up a batch of this salad. Chickpeas work great too–it won’t be an exact copycat, but it will still taste amazing.
With a homemade dressing and a handful of chopped cilantro to finish things off, this copycat recipe honestly tastes just like the real deal.
Whenever I cook grains like quinoa or rice, I always make extra and freeze portions in quart size zip-top bags. That way the longest part of the whole salad make process is already complete!
This is a great meal prep salad, whether you are eating at home, or want a healthy lunch to take to work. It’s also a great side dish, and a popular potluck salad.
It will keep in the refrigerator for up to a week, which is perfect because that’s about how long it takes me to eat the entire batch.
Of course you can switch up the veggies to use whatever you have on hand. And really, any kind of legume works well in this salad. Black beans are another favorite substitution of mine.
But most times, I stick to the Costco Quinoa Salad version of the recipe because I really do love it. I hope you do too!
Costco Quinoa Salad (Copycat Recipe)
Ingredients
For the dressing
- 1/4 cup olive oil
- 1 tablespoon white wine vinegar
- 1 tablespoon lemon juice
- 1 tablespoon sugar
- Salt and pepper to taste
For the salad
- 2 cups cooked cooled quinoa
- 1 cup canned lentils rinsed and drained
- 1 red pepper seeded and diced
- 1 small tomato seeded and diced
- 1 medium cucumber diced
- 1 cup kale finely chopped
- 2-3 tablespoons freshly chopped cilantro
Equipment
- Rubbermaid Storage Containers
- Olive Oil Dispenser
Instructions
- In a large bowl, whisk together the ingredients for the dressing.
- Add all of the salad ingredients to the bowl and toss to mix well. Season with salt and pepper, to taste.
- Serve at room temperature, or refrigerate until ready to serve.

The salad was tasty but it was missing the texture of the actual costco salad which includes mung beans and bulgar. I had to add some extra spices to make it a little more flavorful as well.
