Crunchy Asian Coleslaw

I’ll be honest, there aren’t a lot of ways I enjoy eating cabbage, but this Crunchy Asian Coleslaw is definitely my favorite thing to do with cabbage.

This colorful slaw is crispy, crunchy, colorful and so easy to make. Especially if you use pre-shredded cabbage and carrots from the grocery store produce department.

If you’re starting with whole cabbage, I definitely recommend using a food processor to make quick work of things.

Although a good old fashioned box grater and some elbow grease will also do the trick.

Either way, this zesty cabbage salad is going to become a favorite! It’s great on its own, especially with grilled fish or chicken, but it’s also a great topping for tacos, pulled pork and rice bowls.

Crunchy Asian Coleslaw

As far as I’m concerned, the best thing about this coleslaw are the sesame seeds and crushed peanuts–especially the crushed peanuts!

But I do serve them on the side in case of allergies, and because not everyone in my family enjoys peanuts. Which is fine. More peanuts for me!

I prefer to use both red and green cabbage in this slaw, mainly for the added color. If you’ve only got on kind of cabbage available, that will work just fine.

And the homemade Asian-style dressing is amazing. I like to make a batch and keep it in the fridge because it’s great on all kinds of salads, and as a marinade for chicken.

  • Sesame oil
  • Rice vinegar
  • Honey
  • Soy sauce
  • Salt and pepper
  • Chili flakes

Ingredients 

For the slaw

  • 8 cups shredded cabbage
  • 3 green onions sliced
  • 1/2 cup thinly sliced red onion
  • 1-2 cups shredded carrot
  • 1/2 cup chopped cilantro
  • Crushed peanuts for topping
  • Toasted sesame seeds for topping

For the dressing

  • 3 tablespoons vegetable oil
  • 2 teaspoons sesame oil
  • 1/4 cup rice vinegar
  • 3 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 clove garlic minced
  • 2 teaspoons grated ginger
  • 1/4 teaspoon chili flakes
  • Salt and pepper to taste

Instructions

  • In a large bowl, toss together the cabbage, green onion, red onion, carrots and cilantro.
  • In a small bowl, whisk together the ingredients for the dressing. Add desired amount of dressing to the slaw mixture and toss to coat well.
  • Just before serving, add crushed peanuts and sesame seeds, if desired, or serve then on the side.
