And in my humble opinion, one of the best things you can do with fresh peaches is make this Old Fashioned Peach Cobbler.
I look forward to the appearance of peaches at the farmers’ market every summer. just so I can make this cobbler.
Warm from the oven with a scoop of vanilla ice cream, this is about as wonderful as dessert can get. And it’s so easy to make.
Once you have the peaches, everything else you need for this cobbler recipe is probably already in your pantry. I’m talking things like flour, sugar, cinnamon and vanilla.

After all, it wouldn’t be “old fashioned” if you needed a bunch of fancy, new-fangled ingredients.
And since this is a great, basic cobbler recipe, you can switch up the fruit to use what’s in season–like apples, for example.
You can even mix fruit together–peach and blueberry is one of my favorite cobbler combinations!
I like to bake this in individual serving dishes, but it tastes just as delicious baked in a single larger dish.

This was amazing! I was a little worried that there would not be enough of the topping, but the dough expanded while baking for just the right amount. Love this recipe and will be making again many times!

- Use peaches that are ripe, but still a bit firm. A cobbler made with hard, under-ripe peaches just won’t be good, no matter how long you cook it. And if the peaches are too ripe, the cobbler may be runny.
- Let the cobbler stand for 20 minutes or so before serving. This will give it a chance to firm up a bit, and the filling will be warm, but not piping hot.
- A big scoop of vanilla ice cream is the perfect way to finish off this cobbler.

Do I need to peel the peaches?In this recipe, I definitely recommend peeling the peaches. The peels will come off of the peaches during baking and give the finished cobbler a strange, unappetizing texture.
What if my peaches aren’t ripe?The peaches will soften somewhat when baked, but the final result will be sweeter and much better tasting if you use ripe peaches. To speed up the ripening process, place the peaches in a brown paper bag and seal the top. They should be ready to use in a day or so.
What are good toppings for peach cobbler?Vanilla ice cream is our favorite, but whipped cream, caramel sauce, honey and roasted or candied nuts are also great choices. Or use a combination of your favorite toppings.

Old Fashioned Peach Cobbler
Ingredients
For the filling:
- 8 fresh peaches peeled, pitted and sliced
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon almond or vanilla extract
- 2 teaspoons cornstarch
For the topping:
- 1 cup all-purpose flour
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 6 tablespoons butter chilled and cut into small pieces
- 1/4 cup boiling water
- 3 tablespoons white sugar
- 1 teaspoon ground cinnamon
- Vanilla ice cream for serving
Instructions
- Preheat oven to 425 degrees. In a large bowl, combine 8 fresh peaches, peeled and sliced, 1/4 cup white sugar, 1/4 cup brown sugar, 1/2 teaspoon ground cinnamon, 1/8 teaspoon ground nutmeg, 1 tablespoon fresh lemon juice, 1/2 teaspoon almond or vanilla extract, and 2 teaspoons cornstarch.
- Toss to coat peaches evenly and pour into a 2-quart baking dish or 5-6 individual baking dishes. Bake in preheated oven for 10 minutes.
- Meanwhile, in a medium bowl, 1 cup all-purpose flour, 1/4 cup white sugar, 1/4 cup brown sugar, 1 teaspoon baking powder and 1/2 teaspoon salt. Blend in 6 tablespoons butter with a pastry cutter or your fingertips until mixture resembles coarse meal. Stir in 1/4 cup boiling water until just combined.
- In a small bowl, stir together the 3 tablespoons white sugar with 1 teaspoon ground cinnamon.
- Remove peaches from oven, and drop spoonfuls of topping over them. Sprinkle the cinnamon and sugar mixture evenly over the topping. Bake for 25-35 minutes, or until topping is golden brown. Serve warm with vanilla ice cream.

Thank you for your response. If we are using cold butter snd makingit sort of cold pastry type then why use hot water to melt the cold butter

Any kind of fresh peaches will work. The topping just needs to be crumbly. You should cut in the butter with a pastry cutter or your hands. I don’t recommend a stand mixer for the topping, but if you use one, I would not run it very long. You have different options for pan size, that I mention in step 2 of the directions. It just depends on whether you want a big cobbler, or individual serving size cobbler.
