Parmesan Garlic Roasted Potatoes

- 1.5 pounds potatoes cubed
- 1-2 tablespoons olive oil
- 1 teaspoon garlic salt
- 1/4 cup grated parmesan cheese
- Salt and pepper to taste
- 1 tablespoon chopped fresh parsley
Preheat oven to 400 degrees. Spray a large baking sheet with non-stick cooking spray. Arrange 1.5 pounds potatoes, chopped, in prepared pan. Drizzle with 1-2 tablespoons olive oil then sprinkle with 1 teaspoon garlic salt, 1/4 cup grated parmesan cheese, and salt and pepper, to taste. Toss to coat potatoes evenly.
Bake for 25-30 minutes, or until potatoes are tender, stirring once half-way through baking time. Toss with 1 tablespoon chopped fresh parsley and salt and pepper, to taste, before serving.
