Recipe Tips
- Don’t crowd the pan: Give your potatoes space so they roast instead of steam.
- Stir halfway through: This helps ensure even browning on all sides.
- Toss in a bowl or bag: For the most even coating, mix everything together before adding it to the pan.
- Chop uniformly: Irregular pieces will cook unevenly; aim for about 1-inch cubes.
Storage & Reheating
- Storage: Keep in an airtight container in the fridge for up to 4 days.
- Reheating: Pop them back in a 400°F oven or air fryer for 5–10 minutes to bring back that crispy texture. The microwave works in a pinch, but they’ll be softer.

Variations and Fun Twists
- Spicy Kick: Add a pinch of cayenne or smoked paprika.
- Cheesy Upgrade: Toss in some shredded cheddar during the last 5 minutes of baking.
- Herb Swap: Use rosemary or thyme instead of parsley for a more earthy flavor.
- Lemon Zing: Add a squeeze of lemon juice and some zest before serving.

Do you cover the dish when you put it in the oven?
Danelle
Nope. Leaving it uncovered helps the potatoes get more crispy.

I add all to a ziplock bag and toss to coat and then add to casserole pan, also I give the potatoes a start by microwaving about 5 minutes.
