APRICOT SPRITZ COOKIES — These beautiful butter cookies have a rich, buttery texture and a sweet jam filling. They’re fun to make and eat year-round, but look especially pretty on a holiday cookie tray.
Every holiday cookie tray needs a beautiful buttery cookie, and these Apricot Spritz Cookies are my favorite “fancy” Christmas cookie to make–and to eat!
My favorite thing about these cookies is that they are really so easy to make. Most spritz cookie recipes require a cookie press, but for these all you need is a piping bag (or a regular zip-top bag) and a star shaped piping tip.
Personally, I’m not a fan of specialty kitchen equipment that I only use once or twice a year, so I love that I can make these dainty jam filled cookies with simple equipment I already have.
And in case you’re wondering, spritz cookies come from the German word spritzen which means “to squirt,” which I guess explains the use of a cookie press. But a plastic bag and a piping tip do the same thing!
Of course, if you want to make spritz cookies in fun shapes–like Christmas trees or flowers–you will need to invest in a cookie press.
Although this recipe calls for apricot jam, you can definitely use just about any kind of jam or jelly you’d like. Raspberry jam is an especially festive choice for the holiday season.
I also love using fig or blackberry jam to fill these cookies. If I want a more colorful plate of cookies, I simply use several different jams or jellies to fill a single batch of cookies.
These cookies do freeze well, but I suggest freezing them in a single layer on a large cookie sheet, then packaging them into freezer safe stories containers. These delicate cookies are less prone to break or stick together if they’re frozen before you stack them for long term freezing.
If you’re feeling especially motivated, you can even fill these cookies with your own homemade preserves. And they’re not just great for the holidays. These cookies are wonderful to serve for tea parties and baby showers too.

Here’s what you’ll need to make Apricot Spritz Cookies
- Butter
- Sugar
- Salt
- Vanilla
- Eggs
- Cake flour
- Apricot jam
Apricot Spritz Cookies
Ingredients
- 1 cup butter softened
- 2/3 cup sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 1 egg
- 2 1/2 cups cake flour
- 1 cup apricot jam
Instructions
- Preheat oven to 350 degrees. Line two baking sheets with parchment paper.
- In the bowl of a stand mixer, beat the butter and sugar until light and fluffy. Mix in the salt, vanilla and egg.
- Gradually add the flour, about 1/2 cup at a time. The dough should be soft, but not sticky.
- Transfer the dough to a piping bag (or large zip-top bag) fitted with a large star tip. Pipe the dough into 2 inch circles on the prepared baking sheets, leaving about 2 inches between cookies.
- Using a wet finger or thumb, make a small indent in the center of each cookie. Place about 1/4 teaspoon of jam into the center of each cookie.
- Bake for 12-14 minutes, or until very lightly brownen on the bottom and edges. The tops of the cookies should still be pale. Transfer to wire racks to cool completely.
