SWEET AND SPICY MARINATED GRILLED SHRIMP — Grilled shrimp marinated in a sweet and spicy tomato based sauce.
We love grilling at my house, and this Sweet and Spicy Marinated Grilled Shrimp is one of our new favorites!
Of course, living in Colorado, the weather doesn’t always cooperate when we want to grill. The spring is especially unpredictable. It can be snowing one day and 75 degrees the next!
Which is why I love my Hamilton Beach Indoor Searing Grill. It allows me to grill indoors, any time of year!
This grill has so many great features! The adjustable temperature control and high searing temperature really take the guesswork out of grilling.
A light will even indicate when your grill reaches the desired temperature. But I really love that this compact indoor grill can be used regardless of weather.
It’s also easy to clean–the removable hood and drip tray are both dishwasher safe.
It worked perfectly for this grilled shrimp recipe, which starts off with a sweet and spicy marinade.
I like to use a zip-top bag to marinade my shrimp for about an hour before grilling. And the great thing about shrimp is that it cooks up in practically no time. Which makes it perfect for busy week night meals.
My family has no idea this recipe is so easy, and they feel like they’re eating in a fancy restaurant!
I like to serve this shrimp with a side of rice pilaf, but mashed potatoes, grits or a green salad are also great options.
Sweet and Spicy Marinated Grilled Shrimp
Grilled shrimp marinated in a sweet and spicy tomato based sauce.
Ingredients
- 4-5 cloves garlic, minced
- 1/4 cup olive oil
- 1 (14 oz.) can diced tomatoes
- 2 tablespoons red wine vinegar
- 1/4 cup sweet chili sauce
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon dry basil
- 2 pounds fresh shrimp, peeled and deveined
Instructions
- Place everything but the shrimp in a blender and puree until smooth.
- Add the marinade and the shrimp to a large, zip top plastic bag and seal. Refrigerate for 30-60 minutes.
- Lightly oil grill and preheat to the searing setting. Thread shrimp onto skewers.
- Cook shrimp for 2-3 minutes per side. Do not overcook.

I live on the east coast of Australia. Prawns are plentiful here, in fact we had garlic buttered prawns on the barbie on Christmas Day. I am always looking for different ways to cook them. Since there is only the two of us usually, would the marinade keep in the fridge (or even freeze a portion)? I could halve the recipe but then what to do with a half tin of tomatoes. Humm…. what do you think Danelle? Can it be frozen etc? They sound really nice. Maybe I will have to wait until the mob come over?

I have never tried freezing it, but it’s worth a try! I’d love to know how it works if you do. 🙂 I think it would keep in the fridge for a week or so.
