Foil dinners are also great for camping. I can’t tell you how many times I’ve sent my boys to Scout camp with a foil dinner!
I especially love using smoked sausage in tinfoil dinners, because it’s precooked, so I don’t worry at all about the meat getting cooked thoroughly. Which can be a really good thing when a 12-year old is making his own dinner over a campfire in the middle of the woods.
You can use just about any kind of potato in this recipe–russet, Yukon Gold, or red, for example. Just make sure to slice your potatoes pretty thin, so they are tender by the time the beans and sausage are ready.
Mushrooms, peppers and other veggies are also great additions to these foil packs. And with plenty of savory seasonings and that grilled, smoky flavor, the results are always amazing!

Tips for Choosing and Storing Green Beans
Appearance: Look for brightly colored beans that snap easily when bent. The skin should be smooth and tight. Avoid beans that have visible seeds and blemishes.
Size: When it comes to green beans, bigger isn’t necessarily better.” When beans too large or excessively thick, they can get get tough or stringy. You’ll also lose that sharp, fresh green bean flavor.
Storing: Keep unwashed green beans in a reusable container or plastic bag in the refrigerator crisper. Whole beans stored this way should keep for about seven days.
Here’s what you’ll need to make Sausage Green Bean Foil Packs
- Smoked sausage
- Produce: green beans, potatoes
- Spices: garlic powder, onion powder, oregano, basil, salt and pepper
- Olive oil
- 2 (14 oz.) smoked sausages, sliced
- 1 pound fresh green beans
- 1.5 pounds potatoes, thinly sliced
- 3 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- Preheat grill for medium to medium high heat.
- Place sausage, beans and potatoes in a large bowl. Add oil, and seasonings/spices and toss to coat well.
- Spray 6 large sheets of aluminum foil with cooking spray. Divide the sausage and vegetable mixture between the foil sheets. Tightly seal the foil packs.
- Place the foil packs on the preheated grill and cook for about 18-20 minutes, flipping once halfway through cooking time.
