Bacon, eggs and hashbrowns are three of my favorite breakfast foods, and they all come together in this delicious Cheesy Bacon Egg Hashbrown Casserole.

If I have a choice between a sweet and savory breakfast, I’ll almost always choose savory, and this baked breakfast dish embodies everything I love about breakfast.

Of course, I also love breakfast for dinner, and this casserole is great served any time of day. And it makes plenty, so if you’re lucky enough to have leftovers, you can enjoy it for any meal over the next few days.

This dish reheats beautifully in the microwave…..in fact, in may even be better the second day.

Even better, it only takes about 10 minutes to put together (once you’ve cooked the bacon) and it can be made the night before and baked in the morning. Simple, convenient and delicious–you really can’t go wrong with this one.

Cheesy Bacon Egg Hashbrown Casserole

I love that this baked breakfast dish is so versatile and customizable too. You can use diced ham or cooked sausage in place of the bacon. And of course you can switch up the cheddar for almost any kind of cheese.

With some chorizo, a can of diced chilies, and a sprinkling of cilantro, you can transform this casserole into a Tex-Mex meal.

It’s also great with chopped bell peppers or mushrooms. No matter how we make it, we like to make sure the Tobasco Sauce is on the table. The possibilities for adapting the basic recipe are almost endless!

My hungry teenagers–and my hungry husband–devoured this hashbrown casserole. Luckily, it makes enough to feed a crowd. Or a handful of ravenous boys.

  • Frozen hashbrowns
  • Bacon
  • Eggs
  • Milk
  • Spices: onion powder, garlic powder, cayenne pepper, salt and pepper

Ingredients 

  • 1 30 oz. package frozen shredded hashbrowns, thawed
  • 1/2 pound bacon cooked crisp and crumbled
  • 8 eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • Pinch of cayenne pepper
  • 8 ounces shredded cheddar cheese
  • Chopped green onions for garnish optional

Instructions

  • Preheat oven to 350 degrees. Lightly grease a 9×13 inch baking dish.
  • Spread hashbrowns in an even layer in the bottom of the prepared pan.
  • In a large bowl, whisk together eggs, milk, salt, onion powder, garlic powder, pepper and cayenne. Pour over hashbrowns.
  • Sprinkle with half of the cheese, all of the bacon, then the remaining cheese. Cover tightly with foil.
  • Bake for 1 hour, then remove foil and bake for another 5-10 minutes, or until center is set and a knife inserted in the casserole comes out clean. Let stand 5-10 minutes before serving. Garnish with chopped green onions, if desired.

Notes

Can be made ahead up to one day and refrigerated. May need to increase baking time about 10 minutes.

    Itโ€™s just okay. I made it & followed the recipe except added one extra egg & a few slices more of bacon. Itโ€™s a very blah egg bake. Itโ€™s definitely missing flavor & oomph. If your family likes plain dishes then this is a recipe for you.

    I used 12 eggs, 1 lb. bacon and doubled the cheese. Perfect texture and just so yummy. I put it together the night before so it was a breeze serving our visiting family members, 14 people. Served with homemade muffins and mixed fresh fruit. Thanks!

      Haven’t tried that but I think it would work great. And yes, I’d do the same cooking time. Maybe a few minutes longer if it came straight from the refrigerator.

    Can I freeze a few servings of this dish once itโ€™s been baked? Like do you know if that would mess with the texture or flavor or anything? Also thank you for answering peopleโ€™s questions in the comments because my grocery store only had diced hash browns but I had read that you thought those would work just fine.

  • Hello! Iโ€™ve made this in the past, as written and itโ€™s great! Iโ€™m planning to make again this Christmas morning. Last time I was at the store I thought Iโ€™d start shopping for ingredients, though I didnโ€™t have the recipe with me, and I accidently bought the diced hash browns instead of shredded. I have plenty of time to get the shredded but was wondering โ€“ do you think this recipe would work ok with the diced potatoes?

      I think it would work, and might even be better–I actually like the diced hashbrowns more! It might not slice like the shredded version, but be more of a casserole you’d scoop out with a spoon, but I think it would be delicious!

  • Good but add more eggs! Too much hashbrown I would add an additonal 4 eggs to make it 10 total. The 6 eggs doesnt nearly cover the entire pan. Good recipe just add more eggs!

    • I totally agree. It was definitely in need of more eggs as mine was very dry because of all the hash browns. Will make it again and definitely add at least 4 more eggs.

      I don’t see why not. I’d probably bake it in two separate pans.

  • I guess so as to the eggs. I asked because I couldn’t find one recipe online where you only use 6 eggs for a whole package of hashbrowns. I wanted to make sure it wasn’t a typo. And here I am saying Merry Christmas yet. I won’t make any of your recipes.

      Sorry if this is a repeat question, I did scan the comments first! Iโ€™m curious if I half the recipe would I half the cook time as well? Or at least reduce the cooking time some? I suppose the only raw bits are egg, so if the eggs are set it should be good to go?

      So sorry Paula. I just saw your second question about the eggs. It’s just me running this blog, and like you I’ve been busy today preparing Christmas Eve and Christmas Day food for my own family. It’s hard to keep up sometimes, especially with all of the questions I get this time of year. Yes, 6 eggs is correct, but we don’t like it too eggy. You could certainly add 2-3 more if you like. As you can see, the recipe has a 4.5/5 star rating from almost 200 reviews, so that is always a good indication that the recipe works as written. But you are certainly welcome to use another recipe if you have concerns. I do hope you have a Merry Christmas and I’m so sorry to have inconvenienced you today with my slow response.

      I cut the recipe in HALF, cuz it said it feeds 12 to 16 .. and it’s just the wife and I ..
      4 eggs seem plenty for us LOL..
