Recipe Tips

  • Blend time matters: Give it a solid minute or two to make sure it’s smooth and creamy.
  • Consistency control: Leave it a little thicker if you’re using it as a dip, or thin it out with milk for drizzling on salads.
  • Taste and tweak: This recipe is super forgiving—feel free to adjust the lime, cilantro, or spice levels to suit your taste.

Ingredient Notes

  • Ranch dressing mix: If you like a milder Ranch flavor you can use half a packet of Ranch dressing mix, but if you love that classic taste, go for the whole thing.
  • Milk (optional): Add a splash if you prefer a thinner consistency, especially if you’re using it as a salad dressing.
  • Fresh cilantro: Don’t skimp! It gives the dressing its signature vibrant flavor.
  • Lime juice: Fresh-squeezed is best for that bright, tangy kick.

Storage

  • How to store: Pour into a Mason jar or any airtight container.
  • How long it keeps: Up to a week in the fridge—but it probably won’t last that long!
  • Give it a shake: It can thicken a little as it sits, so just give it a shake or stir before serving.

Fun Variations to Try

  • Make it spicy: Add a jalapeño or a dash of hot sauce for a little heat.
  • Avocado twist: Blend in half an avocado for an extra creamy, rich dip.
  • Greek yogurt swap: Use Greek yogurt instead of mayo for a tangier, lighter version.

Made this dressing tonight! My teenagers and husband loved it! I’ve only eaten at Cafe Rio one time so I can’t compare it, but it was delicious. Thank you!
