I love lemons! I always, always keep fresh lemons on hand because I use them almost every day in my cooking and baking.
Whether you’re making salad dressings, sauces, desserts or homemade lemon curd, or simply mixing up refreshing drinks, chances are you’re going to want fresh lemons. Not to mention finishing off seafood, chicken or pasta dishes! I really don’t think there is a more versatile fruit than the lemon.
What should I look for when choosing lemons?
Look for lemons that are heavy for their size and have skin that is smooth, thin and firm. Medium and large lemons, are usually juicier than small lemons.
Lemons that are soft, spongy, or have wrinkled and have bumpy skin will be less juicy.
How should I store lemons?
You can store lemons at room temperature–preferably out of direct sunlight–for up to one week. They will keep in the refrigerator for up to 3 weeks.
What are Meyer lemons?
Meyer lemons aren’t actually true lemons at all, but a cross between a lemon and a mandarin orange. They are usually smaller than regular lemons, with a smooth, deep yellow skin.
They are also less tart than regular lemons, so they work best for sweeter applications, and can even be added in whole segments to salads. Meyer lemons are usually available seasonally, from May through December.
Can I freeze lemons?
You can freeze whole lemons to juice later. Just be sure to thaw them a few hours before using them, or microwave them for about 30 seconds.
Lemon zest can be frozen in a plastic container or bag to use later.
