We love street corn around here, whether it’s served as an appetizer, side dish, a soup, a pasta salad, or a casserole. So it only made sense to add a delicious Mexican Street Corn Dip to the Let’s Dish recipe collection!
This tasty dip features all of your favorite street corn flavors mixed with cream cheese, sour cream and mayonnaise to create the perfect dip for game day, tailgating, backyard barbecues, and neighborhood get-togethers of any kind.
Personally, I like grilling my street corn, because it adds so much flavor, but it will also work to broil the corn in the oven to get that char. If you’re really pressed for time, you can just use thawed frozen corn, or drained canned corn.
You won’t get that charred, smoky flavor, of course, but the dip will still be amazing!
I love serving this dip warm, so sometimes I pop it in the microwave, or keep it in a slow cooker, or even spread it into a baking pan and cook it until it’s hot and bubbly. It’s also pretty darn tasty cold or at room temperature too.
It probably goes without saying that this dip is a must-make for our Super Bowl gathering this year. Whether you’re hosting a football party, or bringing something to a game-day potluck, this dip is a definite crowd pleaser.
I’m pretty adamant about serving this street corn dip with Frito’s Scoops. I’m not saying that’s what you have to do, but it’s what I recommend. Tortilla chips are another good option. Unless you’re planning to eat it straight from the bowl with a spoon.
I like to finish this dip off with some chopped green onions and a sprinkling of Tajin seasoning. If you like, you can also serve the Tajin on the side so people can add as much or as little as they like.
Just be warned, if you make this addicting dip, it may be hard to stop eating it!

Here’s what you’ll need to make Mexican Street Corn Dip
- Produce: corn, garlic, jalapenos, limes, cilantro, green onions
- Cream cheese
- Sour cream
- Mayonnaise
- Spices: chili powder, cumin, onion powder, cayenne pepper, salt and pepper
- Cotija cheese
- Olive oil
Mexican Street Corn Dip
Ingredients
- 4 ears corn shucked
- 1-2 tablespoons olive oil
- Salt and pepper to taste
- 8 ounces cream cheese softened
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 1 small jalapeno seeded and minced
- 1 teaspoon chili powder
- 1/4 teaspoon cumin
- 1/2 teaspoon onion powder
- Pinch of cayenne pepper
- Zest and juice of 1 lime
- 1 tablespoon chopped cilantro
- 1 green onion chopped
- 1/4 cup cotija cheese
- Corn chips for serving
Instructions
- Preheat grill for medium-high heat. Rub corn with oil, then season with salt and pepper.
- Place directly on grill and cook for about 10 minutes, turning often, until corn begins to blacken. Let cool until corn can be easily handled.
- Meanwhile, combine the remaining ingredients (except corn chips) in a large bowl and mix well. Cut the corn from the cobs and stir into the cream cheese mixture. Season with salt and pepper, to taste.
- If desired, heat dip in the oven or microwave and serve warm, or serve cold or at room temperature with Frito's Scoops or tortilla chips.
